Matthew Maddy and I are buddies from Oberlin College. We met Freshman year and bonded over Soccer. Matt was a star player while I preferred mocking the most popular sport in the world. So, a few years later, it made perfect sense to build restaurants together. I became a Chef, Matt started designing and building the prettiest restaurants and bars in Brooklyn.
In September 2008, we opened the doors of No. 7 in Fort Greene to critical acclaim for my menus and Matt’s beautiful design. Bon Appetit named us one of the best new restaurants in the country, and the neighborhood embraced the style that’s been jokingly call “casual badass.” We served a lot of broccoli because we all know Brooklyn needed a little more broccoli.
While climbing mountains in Peru, it occurred to me that maybe life should be a little more terrifying – so we decided to branch out to the isle of Manhattan. In March 2010, No. 7 Sub opened at The Ace Hotel serving the crazy combinations we were known for in Brooklyn. “Imitation Lobster Thermidor”? Why not! The New York Times said I might be “the Willy Wonka of submarine sandwiches,” but I prefer “Sandwich Batman”. It seemed clear the good people of Nomad were happy to have some more broccoli in their lives.
We were soon joined by a new pal—Ian Sugarman—a fellow broccoli-lover, who enjoys things like taking Shake Shack public and blowing things up (digitally) with Base FX in China. After taking Paris by storm and eating everything we could find, we decided to grow the No. 7 family, opening No. 7 Sub shops at The Plaza Food Hall and in Brooklyn Bridge Park (Dumbo). Soon after, we opened No. 7 North in Greenpoint, a bar focused on fun cocktails, cheap beer, pool, and, of course, more broccoli.
No. 7 continues to grow and will soon introduce a new vegetarian fast-food style pop-up with UrbanSpace Vanderbilt called No. 7 Veggie. We hope to see you soon at one of our locations even if you do not dream about broccoli—but you probably should.
